We love freezing our food in ice cube trays for easy storing, portioning, and reheating. Ashley was recently trying to decide what to have for lunch with things that were left in the freezer (and wouldn’t involve anything much more than starting the microwave). What resulted became a new hyper-fixation lunch (and slop bowl) for the days that followed.

Green lentil and caramelized onion soup (aka slop)
While not the prettiest, it is a truly delicious combination of pre-made components.
Ingredients:
– Cooked green lentils (Ashley used a couple pre-frozen ice-cubes of them)
– Stock/broth of choice (Ashley used the frozen turkey stock from our Thanksgiving Dinner)
– Optional: Top with caramelized onions, veggies, croutons, cheese, etc.
Steps: Combine desired amount in a bowl, microwave until warm. Top as desired!
The turkey stock was perfectly flavored and rich for the lentils. We also happened to have made those caramelized onions, which were the perfect addition. That quantity was two onions worth, and it made for a nice change of texture in the soup.
